dc.description.abstractla presente investigación se realizo con la finalidad de fomentar y difundir el uso de la Yaca en las recetas del istmo de Tehuantepec, Oaxaca para aprovechar los valores nutricionales que esta fruta aporta ,innovando las recetas tradicionales representativas y asÍ presentar diferentes alternativas de consumo.The present investigation was carried out with the purpose of promoting and disseminating the use of jackfruit in the recipes of the Istmo of Tehuantepec, Oaxaca to take advantage of the nutritional values that this fruit provides, innovating representative traditional recipes and thus presenting different consumption alternativeses_MX
