Gordillo Velasco, Smirna Nazareth

The overall objective was to physically and chemically characterize the native and chemically modified (oxidized) starch of mango seeds from the Ataulfo and Manililla varieties. The research sought to add value to the seeds, which represent a significant agro-industrial waste (approx. 17% of the fruit), thus reducing the environmental impact and generating new economic opportunities.
A quantitative and descriptive approach was used.
Isolation: Starch was extracted from the cotyledons of the seeds by washing, grinding, and soaking in water with sodium metabisulfite.
Modification (Oxidation): The native starch underwent an oxidation process using sodium hypochlorite (NaOCl) in three concentrations: 2%, 5%, and 10%.
Analysis: Proximal chemical composition (moisture, ash, fat, protein), colorimetry, identification of carbonyl and carboxyl groups, X-ray diffraction (XRD), infrared spectroscopy (FTIR), and scanning electron microscopy (SEM) tests were performed.

Proximal Chemical Composition: Significant variations were observed after oxidation. The 5% oxidized treatments (AAO 5% and AMO 5%) showed the lowest moisture levels (approx. 2.9%). The fat content decreased in the modified starches compared to the native ones, while there were no significant differences in protein content between treatments.
Color: Lightness (L^*) increased significantly with oxidation. Native starches were the least luminous, while oxidized starches had higher values, indicating a whiter and purer material.
Functional Groups: Chemical modification was confirmed by the identification of carbonyl and carboxyl groups, whose concentration increased proportionally to the level of active chlorine used in oxidation.
Granule morphology: SEM analysis revealed that the granules are spherical or ovoid in shape with an average size of between 15 and 21 µm. Oxidation did not cause visible structural damage or severe deformation of the granules.

Mango seed starch (both native and oxidized) has great potential for the food industry due to its low viscosity, high stability, and transparency properties. Its use allows for the revaluation of waste, improves the economy of producers in the Soconusco region of Chiapas, and enables the development of innovative products such as thickening agents.
